Diacylglycerol (DAG) is a class of physiologically active structural lipids. There are two main forms, 1,2-diacylglycerol and 1,3-diacylglycerol. Glycerol is often used as a natural trace component of edible fats and oils from a variety of sources, and has a wide range of applications in the food, pharmaceutical, and chemical industries, with good prospects for industrial applications.
With its small structure and simple composition, glycerol diester is a lipid intermediate in metabolism and can also be used as a component of biological membranes. It can act as a second messenger and activate many signaling cascades for a long time. Importantly, the stereochemistry of DAG isomers determines their various roles in metabolic pathways.DAGs are also important in cell membrane regulation.DAGs induce membrane fusion in different ways, mainly through partial dehydration of bilayer surfaces and increased curvature of lipid monolayers.
In the food industry, the detection of diglycerides and diglyceride isomers can be used for food safety quality testing and quality identification.
